This is a modern drink. It’s best described as either a Dry Bobby Burns (
https://youtu.be/1h-MGcmCj1M) or a Scotch Martini. It's a light, delicate, dry cocktail made with Scotch Whisky, Dry Sherry (Manzanilla), Benedictine, Orange Bitters and a Lemon Twist.
I found this drink in the PDT Cocktail Book. It was invented by John Deragon in 2007. At the time, in addition to being a founding crew member of PDT and a big mixology advocate, Deragon was a CTO at a tech company. Definitely a man of many hats.
The drink was named after the Woolworth Building in NYC. The Woolworth was the tallest building in the world in 1912, when it was built. It held that title until 1930 when 40 Wall Street and then the Chrysler Building and eventually Empire State in 1931 took over as tallest buildings. The Woolworth was built at the behest of F.W. Woolworth, the owner of the department store chain and pioneer in the business model of the Five and Dime. He wanted only the best for the building with his namesake and he financed it exclusively with cash.
As for the drink, the base spirit is Scotch, but the star of the drink is the Dry Sherry. Sherries are Spanish fortified wines that range from extremely dry to sweet. Unlike Vermouths that basically have 3 steps (dry, white and sweet), Sherries have more varieties. The most common dry sherries (in order from most to least dry) are Fino, Manzanilla, Amontillado and Oloroso. There are also Cream Sherries that are sweet. Those are not for this drink.
The recipe specifically calls for Manzanilla. But I've made it with Amontillado and it makes for a pretty good drink. The Amontillado version is not as sharp, but it's pretty close. The real version, the Manzanilla version is really crisp and clean. The Sherry steals the spotlight and helps makes the drink really dry.
For the Scotch, you'll want something that lends itself to not being too dominant flavor-wise. You don't want the drink overpowered with smoke or huge caramel or a tart, lingering madeira finish. Something clean and delicate is the way to go. The PDT recommends Asyla from Compass Box. It's their most Japanese expression. So a Hibiki or Taketsuru Pure Malt would also work wonders in this one. If you're looking for a cheaper option, the Great King Street Artist's Blend is a good one. But whichever whisky you use, make sure it's one that has a lot of flavor, but is not too overwhelming. You don't want it to drown the cocktail.
Benedictine, as usual, should be actual DOM Benedictine. Not the ready-made-cocktail, B&B. You can make B&B with Benedictine, but you can't make much else with B&B.
At the PDT, they like to blend their Orange Bitters and make a "House Orange Bitters," by blending 1 part Regan's and 1 part Fee Brothers. Since the recipe calls for 2 dashes, I do a dash of each bottle. Do whatever works best for you: one brand of Orange Bitters, a dash of each or two dashes of the blend of both.
This drink is best as an aperitif or a first drink of the night. The sharp, distinct brightness of it will wake up the palette and get you ready for whatever you have in-store for the night. I know it sounds discordant to call it a Dry Martini ( https://youtu.be/hIMrC9ezHYA) with Scotch, but it's really striking how similar it is. It's like the Martini's malty cousin. And like a Martini, it's really refreshing. It's not something you'd expect from a Scotch cocktail, but once you've tried it, it's definitely a welcome departure. Cheers!
