In the mid 1800's Genever was very prevalent in recipes only most of the time it was listed as "Gin". Genever or Holland Gin is closer to an unaged malt whisky than the infused neutral grain spirit known today as "gin." Today the word "gin" is used as a short-hand for London Dry Gin. Genever is the evolutionary grandfather of London Dry. In between Genever and London Dry was Old Tom Gin. The succession went: Genever, Old Tom, (Plymouth, if you want to count that), London Dry, New Wave (aka New Western).
The simplified version of that chain is Genever to Old Tom to London Dry. Genever is maltier, funkier. Old Tom is sweeter. London Dry is bold and spicy. London Dry has certainly conquered the word "gin." It's what the word defaults to. But before that, it used to mean Genever. So in England in the 1850's when a Gin Punch became known as a John Collins ( https://youtu.be/6tpzOFVugbo), it was a Genever Collins.
Twenty or so years later when the drink came to America, it began to be made with Old Tom Gin, a newer spirit to the cocktail game. It caught on and annexed the name. A John Collins made with Old Tom Gin, became a Tom Collins and the John Collins faded away.
Old Tom Gin, however, didn't survive as well as it's evolutionary offspring, the London Dry. Old Tom, too, faded into obscurity. Like orange bitters or kinas, production slowed, then stopped. So for decades people were making Tom Collinses with London Dry as the substitute for Old Tom. A Tom Collins with London Dry is a great drink, but a Tom Collins with Old Tom is even better.
A Tom Collins is one of the original SEO manipulators. It traded on the name of a famous drink to kickstart its popularity. This became a common practice in the mid-to-late 20th Century in the west with Vodka. Vodka ended up usurping most drinks that once called for Gin as the base spirit. This gave birth to the Greyhound, the Vodka Gimlet, Vodka Tonic ( https://youtu.be/vQVIW2VE_tI), and most famously the Kangaroo Kicker, which was rebranded as the Vodka Martini ( https://youtu.be/joM2W46SMy0). And James Bond certainly played a big role in this coup.
Bond never drank a Tom Collins "on screen" in the books, but he did fantasize about it. In The Man with the Golden Gun, after being wounded in battle and crawling through a swamp to escape, Bond had a vision of a Jamaican feast with a suckling pig and a smorgasbord of drinks including, champagne, whiskey sour ( https://youtu.be/jWeCefJj-T0), rum punch ( https://youtu.be/U-_VN-oB6wA) and Tom Collins. This vision, while distracting, helped him to keep going. It was also an insight as to what pictured as a paradise.
But the 1980's version of a Tom Collins, that was poured out of a plastic jug full of pre-made gloop, would have no place in Bond's paradise. It would need to be made with fresh ingredients. I like making it with granulated sugar, but if you wanna save yourself a step, feel free to make it with simple syrup instead. Either way, as long as you're in control of the ratios, it can still be a drink worthy of a fantasizing over. Cheers!
Recipe:
2 oz Old Tom Gin (or London Dry if you must)
1 oz Lemon Juice
1 tsp Granulated Sugar (or Simple Syrup)
top Soda Water
garnish Lemon Wedge
Stir all ingredients (except soda). Pour over ice in a collins glass. Top with soda water. Garnish with lemon wedge.
