This is an original drink inspired by The Shining made with Rum, Campari, Cherry Liqueur, Curaçao and Lime Zest. The drink is much lighter than 12 Bottle Bar’s other Shining-inspired drink, the Jack Torrance (
https://youtu.be/f5XNyh_Z4nY). The interpretation of the drink could hardly be more literal. It’s rum-based and it’s red.
The color comes from both the Campari and the Cherry Liqueur. I didn’t want the drink to be as bitter as a Negroni ( https://youtu.be/AxRvp7LfdeA), but I did want there to be a touch of bitterness. The Cherry Liqueur, Curaçao and Rum all help cut through the bitterness and lend a sweetness to the drink.
For the Cherry Liqueur, the most famous choice is Cherry Heering, but there are others out there. In this case, I’m using Combier Rouge. Whichever one you use, Cherry Liqueur is a bottle you should have lying around in case you want to make a Blood & Sand ( https://youtu.be/a8jBZzBKAfc) at a moments notice.
The Campari and Cherry Liqueur were helping to strike a balance of sweetness and a touch of bitterness. The dry Curaçao works well with rum and compliments the citrus characteristics of the drink. But there are already a lot of sweet components, so you don't want the Orange Liqueur to be too sweet and throw the drink out of whack.
Rum is a naturally sweet spirit and it makes this drink a little sweeter than it would be with a different base spirit. (I made one with Mezcal in the R&D phase. It was good, but something completely different.) It’s rare to get a stirred rum drink that’s all booze. I’m certainly a more attracted to stirred cocktails and always on the look out for stirred rum drinks. There are a few out there, but not nearly as many as there are for whiskey or gin.
I was originally playing around with Wray and Nephew for the rum, but at 63% ABV (126 proof) it was so funky and intense and overpowering, that it didn't quite work for this drink. It’s possible to make this drink with a light rum, but a dark rum works better and an overproof dark rum works best. I like the Smith & Cross for the rum, but any Dark Rum will do.
Despite the fact that I'm using a Jamaican rum, I took a page out of the early 20th Century Cuban bartender's playbook. The technique of stirring the drink with the lime zest and then straining it out of the final drink was used in several drinks, but notably in the Cuban Old Fashioned ( https://youtu.be/HgBSaO_8ffg). It's the perfect way to add that big citrus note to the drink without adding the tartness or dilution of lime juice.
The drink is semi-sweet and approachable but doesn’t totally shy away from its bitterness. It’s funky and citrusy and tempting. You might want to come play with Redrum for ever and ever…and ever. Enjoy!
Recipe:
1.5 oz Rum
0.5 oz Campari
0.5 oz Cherry Liqueur
0.25 oz Curaçao
Lime Zest (for stirring)
Stir with ice. Double strain into chilled rocks glass.
