Coffee Liqueur and Campari really belong together. This is especially true of the St. George NOLA Coffee Liqueur. It's made from coffee and chicory cold brewed in 95% alcohol then mixed in a 4:1 ratio with regular coffee and chicory cold brew (in other words with water) then lightly sweetened. So there is sweetness in this coffee liqueur, but nothing like syrupy, almost sickly sweetness of a Kahlúa. If most coffee liqueurs are too much for you, you should give this one a try. It's made with the coffee drinker in mind and like a good coffee, it doesn't need to be dressed up. NOLA is one of the least sweet coffee liqueurs, so if you're using something else, you may need to use a little less to get the drink to stay in balance. If you're using Kahlúa, try picking up the Kahlúa Especial. It's not as sweet as regular Kahlúa and a little higher proof, which is always a good thing. Tia Maria or some other craft or higher end coffee liqueurs might work, but like I said, you may need to tweak the ratios to get the sweetness does not overpower it.
Most of the sweetness come from the base spirit, Singani, one of Bolivia's best kept secrets for centuries. It’s an eau de vie from the Bolivian Andes and was only available in Bolivia for most of its existence. Luckily for everyone outside of Bolivia, Singani is making its way to the rest of the world with brands like Rujero and Singani 63. Depending on where you are, they might be more of a chore to track a bottle down, but there are a lot of online retailers who will ship it to you. It's definitely an exciting spirit and worth the effort to get your mitts on it.
In terms of cherries, if you feel up to it, I recommend making your own ( https://youtu.be/FXLI4XvFlPo). If you don’t have time or are otherwise not inclined to make Maraschino Cherries, be sure to get some good, quality Maraschino cherries like Luxardo.
The name of the drink comes partially from the color, but also from the idea that it's not what it seems. The flavors are surprising. If you like Campari and coffee, you'll dig this drink.
Like a Boulevardier ( https://youtu.be/NkQmjkhEVMA), it's supposed to have a balanced bite to it. The drink is complex, it's earthy and bitter and sweet and chocolatey, but it also has a good equilibrium. It's perfect as a pre-meal aperitif or for the first drink of the night. Enjoy!

1.5 oz Singani
1 oz Coffee Liqueur
0.5 oz Campari
1 dash Aromatic Bitters
garnish Maraschino Cherry
Stir over ice. Strain over large ice in a rocks glass. Garnish with maraschino cherries.
