Here's how to make the Tiki cocktail, Mr. Bali Ha’i, which is made with Dark Jamaican Rum, Light Rum, Coffee Liqueur, Lemon Juice, Simple Syrup, Pineapple Juice, and optionally, a Pineapple Frond for garnish. This drink was popularized by Tiki historian and Tiki bar owner, Jeff “Beachbum” Berry. However, the most famous aspect of it is actually its signature mug.
The Mr. Bali Hai tiki mug comes from the Bali Hai restaurant in San Diego. The tiki temple, Bali Hai, was founded in 1954, but its building was originally called Christian’s Hut or simply, The Hut. It was named after a bar built for the set of the Clark Gable movie, Mutiny on the Bounty, which was shot on Catalina Island in 1934. Gable’s character was named Fletcher Christian. However, The Hut on Shelter Island was short-lived. It went bankrupt twice in about a year and was eventually sold to and re-branded by Tom Ham in 1954. Ham named the joint, Bali Hai, after the famous song in the musical, South Pacific, which is certainly fitting for a tiki restaurant.
Outside of the Bali Hai is a tiki-esque statue known as Mr. Bali Hai. The mug is made in the statue’s image. The drink on Bali Hai’s current menu, called Mr. Bali Hai, is not the same drink listed here. This drink is the one published in Beachbum Berry’s, 2002 book, Intoxica, and on his app, Beachbum Berry’s Total Tiki. According to Berry, this drink dates back to approximately1960. He was able to get ahold of it via a recipe scribbled on a slip of paper in the Bali Hai employee lounge. That paper was from the 1970’s. But Berry visited the restaurant after a road trip from LA to San Diego in the early 1980’s. He and a friend ordered several Mr. Bali Hais because they liked the drink, but also because they wanted to keep the signature Mr. Bali Hai mugs. The waiter eventually offered to sell Berry a box of mugs.
Although the mug is iconic, I couldn’t resist serving this one in similar, yet different mug. The Tiki Mug for the Recently Departed was made by Boo Tiki and is, of course, a reference to Harry the Hunter, the victim of a witch doctor’s head shrinking magic, from the droll, bureaucratic waiting room of the damned in Beetlejuice. The wide-eyed disbelief of this mug is almost the Yang to the heavy-lidded hangover of the Mr. Bali Hai mug’s Yin.
This drink struck me because, like the Jungle Bird ( https://youtu.be/jJgwZIaFnYw), this drink used an unusual ingredient in the mix with the more typical Tiki fare of rum, citrus, syrup and pineapple. In the case of the Jungle Bird, the X-factor was Campari, in the case of Mr. Bali Hai, it was coffee liqueur. Coffee and Pineapple may not sound like an obvious combination, but it actually works really well. The dominant flavors are the rum, sour and pineapple, but it is a perfect modifier to help elevate the drink to another level.
Another exciting parallel with the Jungle Bird is that this one can be made without a lot of esoteric ingredients, which can happen in Tiki drinks, particularly the Don the Beachcomber drinks. You could even make this with a single rum if you really had to. Although, only do that in a pinch. There is a nice balance achieved by using both rums. In this case, it has a lot of the full-punchy funk of the dark rum, but it’s tempered by the light rum so that it doesn’t overpower the flavors of the drink. Overall, the drink is really balanced. It’s one that’ll take your mind off your worries, even if those worries are about waiting for your number in Hell’s reception area. Okole Maluna!
Recipe:
1.5 oz Dark Rum
1 oz Light Rum
0.75 oz Coffee Liqueur
0.5 oz Simple Syrup
1 oz Lemon Juice
1.5 oz Pineapple Juice
garnish Pineapple Fronds (optional)
Add all ingredients, but garnish, 12 oz of crushed ice and 3-4 ice cubes to a shaker. Shake. Pour unstrained into Tiki Mug or a Double Old Fashioned Glass. Garnish. Serve with straw.
