This modern drink uses Lightly-Peated Scotch Whisky, Apple Brandy, Sweet Vermouth, Benedictine, Aromatic Bitters, Peychaud's Bitters and an Orange Twist. It's more than a new spin on that perennial favorite, the Vieux Carré (

This drink was invented by Erick Castro, co-founder of Polite Provisions. It got its start back in 2009 when Castro was working at Rickhouse in San Francisco and fixated oncoming up with a drink that combined Scotch and Apple Brandy. He took the template of the Vieux Carré, swapped the rye for lightly peated Scotch, swapped the cognac for apple brandy, monkeyed with the ratios a bit and turned a half windsor into a Full Windsor.
For the Scotch it's important to use one with some peat, but not too much. The Laphroaigs, Ardbegs, Peat Monsters, Bruichladdichs, etc. will be a little too over powering for this one. Highland Park 12 or Ardmore Legacy are good options. They have a boost of smoke but a lighter finish. You could use Black Grouse or Johnnie Black, but I like the Great King St. Glasgow Blend for this one because it's got the medium-light smoke, but also really full-bodied and fruity with a sherried finish. It's got Laphroaig and Clynelish along with a few others in there. It's got an overall bigger flavor than something like Black Label.
As for the apple brandy, I prefer using a Calvados. It's a French, territorial brandname for apple brandy. It's what Cognac is to brandy, Champagne to sparkling wine, etc. It's not necessarily better. Laird's Apple Brandy would be great in it or even Applejack would work, it's just that Applejack has a thinner body to it than Apple Brandy, so that will effect the final drink. But if you use Calvados, James Bond will approve. He certainly enjoyed Calvados in the books.
Bond, however, might not approve of the name of the drink. Because as pointed out in From Russia with Love, “Bond mistrusted anyone who tied his tie with a Windsor knot. It showed too much vanity. It was often the mark of a cad.” But I would argue those are not bad characteristics when it comes to this drink. It's full of plums and honeycrisp apples and allspice and citrus and honey and, of course, a touch of smoke. You don't get away with all that by being a gentleman. You have to be a little brash and tie your tie with a windsor knot. Cheers!
Recipe:
1 oz Scotch
1 oz apple brandy
0.75 oz sweet vermouth
0.25 oz Benedictine
2 dashes Angostura bitters
2 dashes Peychaud’s Bitters
Orange peel, for garnish
In a mixing glass, combine all ingredients with ice. Stir until chilled, and strain into an Old-Fashioned glass over fresh ice. Garnish with a twist of orange peel.
