Learn how to make a Black Velvet worthy of being called a James Bond cocktail by using Guinness Stout Beer and Freixenet Cava (Sparking Wine). The series, Cocktails and Pussy Galore, shows you how to drink like 007 using the Ian Fleming books (not the movies) as the source, which takes you beyond the typical James Bond Martini.
As a rule of thumb, I'm not the biggest proponent of beer cocktails. This one is a pretty good one, as long as you have the right ingredients. It's like a Black and Tan. And like a Black and Tan it can't be sipped on all night. The sparkling texture of the drink is an important component and as soon as that dies, the drink starts to become a lot less appealing.
Traditionally, the drink calls for Champagne and there's no reason for me to disabuse you of that, but I like using Cava. Freixenet works well. It's balanced and on the dry side, but still has a enough sweetness to work in a Black Velvet. And on top of that, Freixenet is fairly inexpensive. So your wallet doesn't take too much of a beating.
Guinness is definitely the assumed stout in this drink, but feel free to use your favorite stout. No one is going to think less of you for it. I prefer the can of Guinness with the hefty, spray-paint-can rattle of the nitro cartridge inside.
Because of the movies, the general perception is that Bond doesn't drink anything but Vodka "Martinis" shaken, not stirred ( https://youtu.be/joM2W46SMy0). But he drank all kinds of things in the books including cubic tons of Champagne and even the occasional beer. Since there was this distortion of Bond's culinary consumption, it became a source of controversy when Heineken was announced as a sponsor of Skyfall. Yet, no one bats an eye when Smirnoff is splattered across the screen in the Connery films.
Anyway, Bond liked both beer and champagne in the books, so a Black Velvet seemed like it would be an obvious fit for him, but he never really had a Black Velvet, he only wanted to get one. However, the thought is father to the deed and he was so specific in his description of it, that it would be fair to assume that he drank them at some point. Bond wanted a Black Velvet with seafood, so next time the wine waiter at fancy seafood joint gives you her recommended wine pairing with your dressed crab, you can tell her, "No thanks. I'll pair my meal like James Bond with a Black Velvet...in a pint glass, not a flute." Cheers!
Recipe:
8 oz Stout Beer
8 oz Sparking Wine
Pour the beer down the side of a chilled pint glass. Fill the glass halfway. Carefully pour the sparking wine over a barspoon to preserve the layers.
