Here's how to make the classic cocktail, the Bee’s Knees, which uses Gin, fresh Lemon Juice, Honey Syrup and an Orange Twist for garnish. It's a modified Gin Sour, but the choice of sweetener makes all the difference.
The Bee’s Knees was invented in the early 20th century by Frank Meier, the head bartender, turned spy at the Ritz Bar in Paris. During WWII he spent his time helping the French Resistance and British spies as well as conspiring in a Hitler assassination attempt, all while continuing to work at the Ritz Bar. But more than a decade before all of his cloak and dagger covert ops, he created the Bee’s Knees.
It was named after the colorful, fad, slang term from the roaring twenties. Like other similar expressions from the time like, "the cat’s pajamas," "the bee’s knees" just meant “great” or “excellent.” And drink certainly lives up to the promise of its namesake.
The original recipe did not call for a garnish. Typically, however, it’s served with a lemon twist, which works well. But I prefer it with an orange twist. This variation comes from the 12 Bottle Bar ( http://amzn.to/22ZXsl6) by Leslie & David Solmonson and it’s a great and welcome addition to this classic drink. The contrasting citrus flavors gives a greater depth to an already complex cocktail.
For the honey syrup ( https://youtu.be/qZ9ndISIL8Q), I prefer it at 3:1. It has a really rich, deep honey flavor, but it's still thin enough to pour and not just coat the sides of your shaker, the way straight honey would. It's commonly made at 1:1, but next time you whip up a batch at 3:1 and see if it works for you.
I like using a navy strength gin with this one. The overproof gin really shines through, where as others have a tendency to get buried. But if you want to use a London Dry, Plymouth, Old Tom or a fancy New Wave gin, go for it. Anyway you slice it, you'll end up with a pretty damn good sour.
The Bee's Knees is particularly well-balanced cocktail that's easy to drink on any palate. 1.5 oz Gin
0.75 oz Lemon Juice
0.75 oz Honey Syrup
garnish Orange Twist (or Lemon Twist alternatively)
Shake with ice. Strain into chilled cocktail glass. Garnish with Orange Twist.
