Today on Mrs Wranglerstar Monday: The Swedish invasion, a proper way to store garden seeds, labeling your canned goods, and Mrs Wranglerstars famous pickled relish.
INGREDIENTS
2 pounds cucumbers, peeled, seeded, and diced
1 pound onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
½ cup salt
3 cups cider vinegar
1½ cups sugar
1 cup water
2 garlic cloves, minced
2 teaspoons ground allspice
1 teaspoon black peppercorns
1 teaspoon celery seed
PREPARE
Toss the cucumbers, onions, green and red peppers, and salt in a large bowl, and set aside for 2 hours. Drain thoroughly.
Combine the vinegar, sugar, water, garlic, allspice, peppercorns, and celery seed in a large nonreactive stockpot, and bring to a boil, stirring until the sugar is dissolved. Add the vegetables and return to a boil. Simmer for 5 minutes. Remove from the heat.
